之前已有过一篇《美国人喜欢吃中国菜》。但除美国之外，世界各地均有中餐馆，同时中国菜也是唯一能在地球上的七大洲都能吃到的菜。而早在杨立伟上天之前，美国人已经把中国菜加入到其航天飞机的菜单中了。所以宇宙中也有中国菜！


在美国，中餐厅数量比麦当劳、肯德基、汉堡王、温蒂汉堡（Wendy’s Hamburgers）四家加在一起还多（据说约有4万家）。每10个美国人家中至少有8个的冰箱里有纸质的白色方形中餐外卖包装盒。但多数外国人不知道，这些他们钟爱的“中国菜”绝大多数中国人压根就没听说过。就拿幸运曲奇（fortune cookie）来说，这个几乎每家国外中餐馆都提供的小点心翻遍全中国36个省、市、自治区，包括港、澳、台，再加上钓鱼岛和南沙群岛上的所有餐馆、厨房，你都找不到。如今能在一些饭店中出现全是因为中国人看了好莱坞电影才知道——“哦，原来中餐馆应该有这道菜！”幸运曲奇准确说来要算日货，最早是由日本人引入美国的。之所以造成现在这种局面，是因为二战时期，美国本土的日本人都被关起来了。这时，勤劳与智慧兼备的中国人民就填补了日本人留下的这片空白，并发扬光大。


在正统中国菜中，国际友人对川菜情有独钟，老外都知道有个Gong Pao Chicken（宫爆鸡丁）。我也曾在四川驻京办事处的餐厅中看见一位身体壮硕的老外伴着青岛啤酒独自想用一大盘辣子鸡。成群结队来此的老外早已屡见不鲜，但独自一人来此的我还只遇到过这一次。此人当时已被辣得满脸通红，满头是汗，但他依然专注地拿着尚未运用利索的筷子在一片辣椒中寻觅鸡丁，神情很是享受。论辣的程度，在国内，川菜不比其近邻湘菜；在国外，它也没有印度菜或墨西哥菜那样火爆。但让无数地球人流连忘返的应是其中的麻。难道川菜是唯一系统地使用麻椒的菜系？可谓小小麻椒，引无数英雄竞折腰！
