橄榄是中东地区非常老的食物，《圣经》里有经常提到，现在的以色列，

除了橄榄油，橄榄被腌制成各种口味。

 


中东地区的各种香料和佐料。

 

以色列地理环境具有多样性，这决定了其自然出产的多样性，再加上以色列建国后农业科技迅猛发展，自然出产颇为丰富，约旦河谷地带出产橘类水果，像橙子，柚子、柠檬等，而其它地方也出产无花果、石榴、橄榄、香蕉等，更有葡萄、西瓜、鳄梨等。

 

以色列是典型的移民国家，有来自包括七十多个国家的犹太移民，最多的是波兰、匈牙利和俄国的犹太移民，这种来自不同地区的移民带来了各种世界风格的食物，当然，典型的犹太“kosher”食物是共同的，而波兰、匈牙利和俄国的食物风格都有很大体现，巴勒斯坦人，大部分是阿拉伯族裔，则喜欢非洲北部和地中海阿拉伯风格的食物。

 

以色列建国初期时，战乱不断，当时新鲜水果是以色列最为奢侈的食物，现在随着以色列农业科技的世界领先地位，各种优质时令水果随时可以满足国人的需要，同时还大量出口，想欧洲人喜爱的鳄梨，而美国的商店里，有大量标有“以色列出产”的优质柚子。而如果在以色列购买，标有“Jaffa”字样的橙子是首选。

 

典型的中东食品包括面食、豆类、蔬菜，以及奶制品，你可以在超市找到品类繁多的软奶还有独特的羊奶酪，肉类包括羊肉和牛肉以及鱼，穆斯林和犹太人都不吃猪肉，所以在以色列只有极少数的超市和专门饲养猪的基布兹（KIBBUTZ）可以买到猪肉。有些菜是磨碎的肉和鱼，还有传统的中东的辣沙拉，拌以豆类酱。很多肉（小牛肉和鸡肉。）的传统做法是炖和煎。and latkes (potato pancakes).在圣经里被称为“流着奶和蜜的土地”的以色列，甜品，特别芝麻和蜂蜜做成的糖果，是小孩子的最爱。
